CHICKEN PAKORAS

CHICKEN PAKORAS RECPIE
(Chicken pieces in gram flour batter)

This is another savoury snack which can be served at high teas, parties or even picnics. For this recipe you need a deep frying pan or wok.

Ingredients
  • 450 g (1 lb) frozen chicken pieces, thawed
  • 110 g (4 oz) besan flour (gram flour)
  • 120 ml (4 fl oz) water
  • ½ tsp salt
  • ½ tsp chili powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • 2 tsp soy sauce
  • 600 ml (20 fl oz) cooking oil for frying

Method
1. Remove the skin of the chicken pieces and cut the flesh from the bones. Cut the flesh into about 2 cm (1 inch) cubes.
2. Bake these chicken cubes in a preheated oven at a temperature of mark 4 (350°F or 180°C) for about 20 minutes. Remove the pieces from the oven and allow them to cool.
3. Sieve the gram flour into a mixing bowl.
4. Mix the flour, water, salt, chili powder, garam masala, turmeric powder, and soy sauce well to form a thick paste.
5. Heat the cooking oil to a high temperature in a wok or deep frying pan. Dip each chicken piece individually in the paste and place it in the hot oil until you have about 5 pieces. After a few seconds the chicken pakoras will float to the top of the oil. Deep fry each side of the pakora until it is golden orange. This will usually take about 2 minutes for each side. With a sieve, drain the pakoras.
6. Repeat with the remaining chicken pieces and serve while hot.
